What is the Higher Certificate in Arts - Culinary Arts course?
The Higher Certificate in Arts - Culinary Arts is full-time over two years. This course is also offered as a National Apprenticeship Programme in Professional Cookery on a day/block release basis over three years.
The course prepares you for employment as a professional chef in the tourism and hospitality industry. As a chef in the skilled profession of cookery, you need to be creative with food. You also have to understand the science of food (including food safety), changing kitchen technologies and the business aspects of catering operations. Training covers the theory and practice of professional cookery and includes four-six months’ paid work placement in businesses each year.
Industry Placement
Students spend 4-6 months in Industry each year. Note: Students on this course will be required to provide their own uniforms and equipment for practical classes; the estimated cost is €275.
Career Opportunities
The course will qualify you to find professional employment in:
- Hotels
- Restaurants
- Licensed trade
- Cruise ships
- Industrial and hospital catering and in other food-related businesses
Career promotion can be rapid, from commis chef to Head Chef or Executive Chef.
Follow on Study
Graduates may progress from this programme to Culinary Arts Degree programmes.

Course Entry
Minimum Entry Requirements:
•5 Leaving Certificate Ordinary D3’s or an equivalent qualification (English must be included in the subjects passed)
•FETAC Level 5 in any discipline.
•RPL (Recognition of Prior Learning) will be considered where applicants can demonstrate sufficient learning gained in a relevant work-based context.
•The Leaving Certificate Applied programme does not meet minimum entry requirements. However, learners with a post qualification level 5 award or with appropriate work based learning are eligible to apply.
•Mature applicants must be 23 yrs by 1st of January on year of application.
*Note - Fáilte Ireland will pay the €1,500 registration fee on this course for successful applicants
