Having studied at Culinary Arts, Tourism and Hospitality, and Hotel Management at Rockwell Collage, GMIT and DIT, Ray spent 35 years working in the Irish Hospitality industry before turning towards education. Ray joined Waterford Institute of Technology in 1994 as a lecturer in Hospitality studies and has been Head of the Department of Languages Tourism and Hospitality for the past 9 years.
A keen interest in benchmarking Irish Craft Skills across the world, Ray has been involved in national and international craft skills competitions since 1998 with many of his students achieving great success in the competitions.
Ray is currently the Skills Competition Manager for Restaurant Service at World Skills International and is also Irish National Representative and a vice president with the Association of European Hotel and Tourism Collages. (AEHT)
