WIT School of Humanities, Department of Arts recently welcomed a guest speaker Martin Corbett Co-Founder of Chapter One, Michelin Star Restaurant
Martin Corbett Co-Founder of Chaoter one, Michelin Star Restaurant who is now retired was invited to speak to first year BA in Hospitality Management students. Ross Lewis continues on the Michelin Star Resturaunt.

The talk was organised by Jacinta Greene Beatty she explains why:
“Martin Corbett, Weekend Magazine & Independent.ie's 'Face of Irish Hospitality 2017', and Co-Founder of Chapter One restaurant in Dublin, and originally from Roscommon, was invited to share his wealth of experience in the Hospitality Industry.
Martin embodies the Irish spirit of hospitality and told students that ‘meeting and greeting is terribly important, eye contact, a good smile, use customer’s names and when they arrive and make them feel welcome. And what is probably even more important is to take the time when they’re leaving to walk them to the door or to their taxi and say ‘thank you very much for coming here this evening’. He also said he was blessed with a business partner Ross Lewis who could turn out such reliably brilliant food, allowing the front of house team to focus on the customer.
Student perspective
Nikki Kelly class representative said although Martin was host to “Arthur Miller, Colin Farrell, Danny DeVito, Gabriel Byrne, Al Pacino, Pierce Brosnan and indeed Queen Elizabeth, his greatest honour was hosting first-time customers for whom a fine-dining restaurant experience wasn’t their natural habitat’.

Jacinta Greene Beatty said by inviting an inspiring practitioner like Martin Corbett, students learnt that best practise, faith, generosity and professionalism were the pillars of Martin Corbett’s success.
