John Keenan had an “itch to scratch,” and did so after 40 years. He decided it was now or never to follow his long-term dream of becoming a chef
I decided to come back to college as I had always had a dream of becoming a chef. I had worked in banking for 40 years. I had such an itch to scratch that I decided it was now or never. I took the leap and went back to college.
I choose WIT because it was close to home for me and with my family commitments, WIT was the perfect choice to be able to commute from. After 2 years at WIT, I graduated with the Higher Certificate in Arts in Culinary Arts.
My long-term dream for me is to become self-employed. It is such a tough industry to break into, has long and unsociable works hours and requires serious dedication but I am ready for the challenge.
What I will say to any mature student thinking about going back to college is to go for it. I thought that there would be such an age gap in the class that I might not fit in. But the class group and coming to WIT made me feel young. Students always help each other out and in my opinion, college is for anybody at any age.
